There's no need to chill the cookies. They make a delicious spring or summer treat and are very lemony. 

I use half a container of cream cheese and two tablespoons of lemon extract (available at any general grocery shop) to make the cookies

. The cookies' thick and oozy texture is aided by the cream cheese. 

Every cookie has layers of lemon taste thanks to the lemon curd, which is created from the zest and juice of two lemons.
