First, a little warning: Avoid using grease in the tube pan or angel food cake pan (instead, use a nonstick or bundt pan)

. Reduce the oven rack to its next-to-lowest setting. Ignore the oven's preheating. 

Gently crack each egg over a small bowl, letting the white drop into it (this recipe calls for no yolks).

As you work, transfer each egg white individually to the mixing bowl. The egg whites may not whip adequately 

if there is even a hint of egg yolk. For this stage, we prefer to use an egg separator.
